Guar Gum Powder is obtained from guar gum which is also known as guaran. Guar beans consist of the ground endosperm which is known as the guar gum. Guar gum is derived by screening, milling and dehusking the seeds of guar beans. When produced guar gum is an off white, free flowing powder.
Guar gum is produced using various processing techniques which depend upon the needs of the end product. The processes which are used in commercial production of guar gum include differential attrition, roasting, polishing and sieving. The guar gum of food grade is fabricated in various stages. The most important in food grade process is the selection of guar split. For cleaning the split, it is screened and then in a double cone mixer it is soaked to prehydrate. The stage of prehydrating is significant because the final product’s rate of hydration is determined in this stage.
A flaker is used to pass the high moisture content soaked splits. After passing, the grounding process is done with the flaked guar splits and then these splits are dried. Rotary screens are used to screen the powder so that the required particle size is delivered. The remaining oversized particles are again either reground in a different regrind plant or to main ultra fine are recycled which depends upon the viscosity requirement of the particles.
The load of the grinder is reduced at this stage. It is difficult to grind the soaked splits. More heat is generated for direct grinding in the grinder which is not required in this process because the hydration of the product is reduced. From the halves of the endosperm, the husk is separated by the processes of polishing, grinding and heating to obtain the refined guar split. The refined guar split is converted into powder by further grinding and treating it.
The germ and husk called guar meal is yielded from the split manufacturing process. The guar meal is used as cattle feed and is sold widely in the international market. The guar meal consists of albuminoids and oil and is rich in protein and husk present is 25% and germ is 50%. The microbial content, rate of hydration and the size of particle defines the food grade of Guar Gum Powder. The E412 guar gum has high nutritional value and is a significant natural food supplement.
